What's the trick to making a really good salt and pepper mix?
I know it's easy to make a good salt and pepper mix. I'm not a big fan of any brand I've tried (even some US "Maggies" or "Pebbles" that I got from a German grocery store). So I'm always looking for a good, light salt and pepper mix. I've tried searching online for recipes, but there are just too many variations for me to be able to find the perfect one.
Here's my current favorite recipe:
1/2 cup kosher salt
1/2 cup black pepper (cracked)
1/2 cup white pepper
1/2 cup smoked paprika
1/2 cup chili powder
1/2 cup garlic powder
What I like about this recipe is that it's really light and the spices mix well. I also think it gives you a good amount of flavor, but not so much that it's overpowering.
However, it seems like there are two main problems I always run into when I try to make this mix at home:
The spices are typically unevenly distributed.

To address the first problem, I usually have to slowly stir the ingredients together so that the spices begin to mix with each other. When I'm just mixing it all in the bowl, it tends to get lumpy (where there's a handful of spice in one spot, and a handful of nothing but salt in another spot). After mixing it for a while, the spices start to even out, and it turns out nice and smooth.
This leaves the second problem, that depending on the spices I'm mixing, the mixture can get a lot chunkier, and I have to take extra care to avoid lumping it all together. For instance, white pepper is much chunkier and coarser than black pepper.
Is there any trick I'm missing? Any tips for mixing spices to avoid these problems? Any recipes I should look into?
